I meant to post this a few months ago when I made my son's birthday cake. This recipe was easy and super delicious! I got the train cake pan from Williams-Sonoma as well.
Ingredients:
*2 1/4 all-purpose flour
*1 3/4 sugar
*2 t baking powder
*3/4 t baking soda
*1 t kosher salt
*16 T(2 sticks) unsalted butter, melted
*1 C sour cream
*4 Eggs
*1 T vanilla extract
1. Have all ingredients at room temperature.
2. Position a rack in the lower third of oven and preheat to 350 degrees F. Grease the cake pan and dust with cake flour.
3. Sift the flour, sugar, baking powder, baking soda and salt into the bowl of an electric mixer. In a separate bowl, whisk together the melted butter, sour cream, eggs and vanilla until combined. Fit the mixer with the flat beater. Add the butter mixture to the flour mixture and beat on the lowest speed until the dry ingredients are moistened, 15-20 seconds. Stop the mixer and scrape down the sides of the bowl. Increase the speed to medium and beat for 30 seconds.
4. Place batter evenly in the cake pan. Bake until a toothpick inserted into the center of the cake comes out clean, about 18-22 minutes.
5. Transfer cake to a wire rack and let cool for 10 minutes, then invert the cake
onto the rack and let cool for at least an hour before decorating or serving.
