BROWNIES

Ingredients:
*Nonstick cooking spray *3 ounces semisweet chocolate *1/2 C carrot puree *1/2 C spinach puree *1/2 C brown sugar *1/4 C unsweetened cocoa powder *2 T margarine or butter *2 t vanilla *2 large egg whites *3/4 C flour *1/2 t baking powder *1/2 t salt
Instructions:
1.Preheat oven to 350. Coat an 8x8-inch baking pan with cooking spray.
2. Melt the chocolate in a double boiler or over a very low flame.
3.In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine and vanilla, and whisk until smooth and creamy, 1-2 min.
4.Whisk in egg whites. Stir in the flour, baking powder and salt with a wooden spoon.
5. Pour the batter into the pan and bake 35-40 min. Cool completely in the pan before cutting into 12 bars.
Hint: Let the brownies cool completely before serving--it is not until they are completely cool that the spinach flavor totally disappears!
My Review:
These brownies are delicious! They only have 133 calories and 3 grams of fiber per brownie. They seem a little more cake-like to me than brownies, but taste delicious! I made them for our super bowl party this past week and my brother-in-law who absolutely loves brownies loved them and was shocked when I told him how healthy they were! Try them, they are fabulous.
