My friend Alicia always gives me the best recipes to try...this is one of hers and it's great! Thanks Alicia:
Ingredients:
*2 C diced potatoes *1 Onion, sliced *1 C diced carrots *1 C sliced celery *1/4 C butter *2 Cans chicken broth *2 t chicken bouillon or 2 bouillon cubes *2 C milk *1/2 C flour *3 C grated cheddar cheese *1 t dry mustard or 2 t prepared mustard *1/8 t cayenne pepper
1.In a large saucepan, saute potatoes, onion, carrots, and celery in butter. Add broth and bouillon. Simmer 30 min or until vegetables are tender.
2.In a medium bowl, mix milk with flour. Blend until smooth.
3.Gradually add milk mixture to vegetables, stirring constantly. Add cheese, mustard, and cayenne pepper. Simmer and stir until cheese melts.
My review:
This soup was delicious...it sounds like a lot of work at first but it is actually quite easy. We liked it as left-overs too. It is a thicker soup but the cheese and vegetables are yummy!!
